Recipe: Chinese Chicken Salad

Welcome to my kitchen! Today I wanted to share another salad recipe with you. If we eat with our eyes first, then this delicious yet stunningly colorful salad is sure to please. I have found that eating salads when trying to lose weight is a great way to get all the nutrients your body needs. This will also keep you from craving all the bad sugar filled things that are unhealthy for you. This salad is a wonderful twist on your normal salad and a great way to mix things up so your taste-buds don’t get bored.

Dressing

1 Spoonful of garlic according to taste. I used approximately 1 tbsp.

1 Tsp. Chili Garlic Sauce (found in the Asian section of most stores)

2 Tbsp. Brown Sugar (you can use the Splenda brown sugar as a substitute if you like)

1/4 cup Rice Vinegar

1/2 cup Gluten Free Soy Sauce (regular is fine)

Sesame Seed Oil  (this is optional- take out if you’re cutting out fats from your diet

1/2 Tsp. Ginger Paste or fresh ground ginger

Whisk all ingredients together in a bowl until they are thoroughly combined and place in the refrigerator to chill.

Salad

1/2 Head Green Cabbage, chopped

1/2 Head Red Cabbage, chopped

1 handful shredded carrots

1 jar sliced water chestnuts

1 small can Mandarin oranges rinsed and drained

Slivered Almonds

Sesame Seeds

Rotisserie chicken

Directions:

Mix all ingredients except the chicken in a large bowl until they are combined well. Then, shred your about 1 cup of your chicken and add to the salad mixture. Once that is done whisk up the dressing to make sure nothing has settled to the bottom and pour over the salad and mix very well.

This really is a easy salad to make and the flavors are amazing. I like feeling like I am getting everything at once, something crunchy and sweet while still getting my fiber and protein. The salad is very hearty and filling and is great for lunch or dinner. So give this a try and let me know what you all think of it. I am sure you are going to love it as much as I do!
