Meals to Lose Weight by: Mexican Salad

One thing I’ve eaten consistently on my diet is salads, but it’s easy to get bored with them.  So here’s my favorite salad recipe that has lots of nutrients plus tastes yummo!

Ingredients:

  • Romain Lettuce
  • Shredded Carrots
  • Yellow Bell Pepper  (or red)
  • Tomatoes
  • Green Onions
  • Corn
  • Kidney Beans
  • Ground Turkey flavored with taco seasoning (Optional)

Dressing:

  • Lighthouse Lite Salsa Ranch
  • Salsa
My daily meal plan includes a salad everyday for either lunch or dinner. BUT to stick with your healthy lifestyle, you have to switch it up and eat different salads each day so you don’t get bored.  I’ll do a few more videos soon on some other great salads :)

Here’s some key ingredients I always keep on hand to make some yummy salads!
  • shredded carrots
  • mushrooms
  • kidney or black beans
  • garbanzo beans
  • shredded rotisserie chicken
  • crunched baked tortilla chips
  • finely chopped green onions (not as strong as the regular onions)
  • shredded cabbage
  • walnuts

    My issue is finding a dressing that I like that’s not so bad for you. I know that this salad will already have something like a dressing, but for just regular salads are my issue. Any suggestions that you like?

      I agree with you and used to have the same problem but now I just make my own.  I can control what goes in and what doesn’t.  Who can pronounce some of the ingredients on products anyway?  A basic dressing I like is a spoonful of grainy mustard, some balsamic vinegar and enough olive oil to wisk it together.  I then add water or lemon juice or both a little at a time to make a good consistency, wisking all the time, tasting as you go.   Add some salt and pepper and done!  Adjust the ingredients to taste as you make it next time.  Another good option is to substitute the mustard and salt and pepper with a very small amount of mayo and Mrs. Dash (flavor of your choice).  Olive Oil in moderation isn’t bad for you.   I know mayo isn’t great for us but the mayo is the right consistency and adds body to the dressing.

    I love salads! Do you use eggs in them for your protein?

    I started working with a nutritionist six months ago, but hit a plateau and have found myself young back to the same habits. How can I break these habits and get back on track?

      Hey!

      I have hit plateaus many times. When I started loosing weight I was 280 pounds..I hit the plateau at 210, 192 and again now at 170.

      I go weeks where I lose nothing..infact I’ve been on my last plateau since October! Just remember, it is a lifestyle change, if your not losing you are maintaing and still giving your body what it needs.

      I KNOW it is frustrating but you are in control of your life. During my 2nd plateau I gave up and started eating more and more..ended up gaining 20 back…had to start again…I’ve made the choice to power through…who cares if it is not comming off right now..it will eventually.

      Try switching it up..find new and exciting recipes that will keep you satisfied. Change your workout routine. Make sure you are around people that will help keep you on track :)

    I remember watching this when you made the video, but never did make it. Came across it last night and ran to the store at midnight to get the few ingredients I didn’t have. Thank you, I was getting so bored with salad that I was straying from my diet. 
    Couldn’t find the dressing so I used fat free 1000 island, it turned out good! I added a bit of lime juice and hot sauce :)

    Has anyone tried the Marie’s Ranch made with yogurt? It is very yummy and only has 60 cals and 3 grams of fat (something like that). I am very picky with what kind of dressing I use and it is really good!

    I made this yesterday and I have to say, it was delicious! The corn and kidney beans are the secret to making this work. I did not even had to add any dressing. and that NEVER happens. lol Thank you!

    Love it! Im not a huge fan of tomatoes but I do enjoy grape tomatoes so i use those instead. I would love if you could post some more recipes.. :) love ya

    Hi Marlena, I know you’ve been busy traveling the world and all ; ). I’ve been excited to hear more salad recipes that you used to change things up a bit!  Please do another salad video.  I get tired of eating the same salads all the time.  Its like chicken breast… theres only so many things I can think of to do to them.  I need ideas!  Thanks!  I’m so proud of you.  Its such a HUGE undertaking to lose that much weight. It takes commitment, discipline, strength, and courage to make such a change. You’re my hero!
